Instructions :

1Heat 2 tablespoons of olive oil in a large pot over medium heat.
2Add the diced yellow onion, diced carrots, and diced celery. Sauté for about 5-7 minutes until the vegetables are softened and the onion is translucent.
3Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
4Add 2 teaspoons of ground cumin, 1 teaspoon of ground coriander, 1 teaspoon of ground turmeric, 1 teaspoon of smoked paprika, and 1/2 teaspoon of ground black pepper. Stir well to coat the vegetables with the spices.
5Pour in 8 cups of vegetable broth and add the can of diced tomatoes with their juices.
6Add the rinsed and drained 1 1/2 cups of lentils, 2 bay leaves, and 1 teaspoon of chopped fresh thyme (or 1/2 teaspoon dried thyme).
7Stir the mixture to combine all the ingredients.
8Increase the heat to high and bring the soup to a boil.
9Once boiling, reduce the heat to low, cover the pot, and let the soup simmer for about 30-40 minutes, or until the lentils are tender.
10Remove and discard the bay leaves from the soup.
11Stir in the chopped fresh parsley and 2 tablespoons of lemon juice.
12Season the soup with salt to taste, adjusting as needed.
13Serve the vegan lentil soup hot, garnished with additional fresh parsley if desired.

Notes :

  • Use a large pot to ensure all ingredients fit comfortably and allow for even cooking.
  • Use a sharp knife to dice the onions, carrots, and celery uniformly, ensuring even cooking.
  • Peel the carrots before dicing to remove any dirt or tough skin.
  • Mince garlic finely to ensure it distributes evenly throughout the soup.
  • Rinse lentils under cold water to remove any debris or dust before adding them to the soup.
  • Use fresh herbs like thyme and parsley for a more vibrant flavor, but dried herbs can be used if that's what you have.
  • Vegetable broth can be store-bought or homemade; choose low-sodium if you want more control over salt levels.
  • Adjust the amount of lemon juice to add more or less tang, depending on your preference.
  • Smoked paprika adds a subtle smoky flavor, but you can substitute with regular paprika if needed.
  • Stir the soup occasionally while it's simmering to prevent sticking and ensure even cooking.
  • Taste the soup before adding salt, as the salt content in the vegetable broth varies.
  • The soup can be stored in the refrigerator for up to 5 days or frozen for up to 3 months for later use.
  • Reheat leftovers gently on the stove or in the microwave, adding a splash of water or broth if it thickens too much.
  • This soup can be served as a main dish or paired with bread or a side salad for a complete meal.

Tips :

  • Use a heavy-bottomed pot for even heat distribution and to prevent sticking.
  • Dice vegetables uniformly to ensure even cooking.
  • Adjust the amount of olive oil if needed; it should just coat the bottom of the pot.
  • When sautéing onions, carrots, and celery, stir occasionally to prevent burning.
  • Ensure garlic is minced finely to distribute flavor evenly.
  • Toast the spices for a richer flavor before adding the broth.
  • Rinse lentils thoroughly to remove any debris or dust.
  • Use low-sodium vegetable broth to control the saltiness of the soup.
  • For a thicker soup, slightly mash some lentils against the pot's side with a spoon.
  • If using dried thyme, crush it between your fingers to release more flavor.
  • Fresh herbs should be added at the end to preserve their flavor.
  • Adjust the amount of lemon juice based on your taste preference.
  • For a smoother texture, blend a portion of the soup and return it to the pot.
  • Add salt gradually, tasting as you go, to avoid oversalting.
  • Store leftovers in an airtight container in the refrigerator for up to 5 days.
  • The soup can be frozen for up to 3 months; thaw in the refrigerator before reheating.
  • Reheat gently to prevent lentils from becoming mushy.
  • Add additional vegetables like spinach or kale for variety.
  • Serve with crusty bread or a side salad for a complete meal.
  • Use smoked paprika for a subtle smoky flavor without meat.
