Ingredients :

Instructions :

1Heat 2 tablespoons of olive oil in a large pot over medium heat.
2Add 1 large chopped onion, 2 chopped celery stalks, and 2 diced medium carrots. Sauté for about 5 minutes until the vegetables are softened.
3Stir in 3 minced garlic cloves and cook for another minute until fragrant.
4Add 1 teaspoon of ground cumin, 1/2 teaspoon of ground cinnamon, 1/2 teaspoon of ground ginger, 1/2 teaspoon of ground turmeric, 1 teaspoon of paprika, 1/2 teaspoon of ground black pepper, and 1 teaspoon of salt. Cook for 1-2 minutes to toast the spices.
5Pour in 1 can (14 oz) of crushed tomatoes and 2 tablespoons of tomato paste. Stir well to combine.
6Add 1/2 cup of rinsed green lentils and 1 can (15 oz) of drained chickpeas to the pot.
7If using, add 1 lb of lamb stew meat cut into cubes.
8Pour in 8 cups of vegetable or chicken broth and 2 cups of water. Stir to combine.
9Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 45 minutes to 1 hour, or until the lentils are tender and the lamb is cooked through (if using).
10Stir in 1/4 cup of chopped fresh cilantro, 1/4 cup of chopped fresh parsley, and 2 tablespoons of lemon juice.
11If desired, add 1 cup of cooked rice or broken vermicelli noodles and stir to heat through.
12For added richness, you can drizzle in 2 lightly beaten eggs while stirring continuously for a minute until the eggs are cooked through.
