1Begin by preparing all your ingredients: chop the onion, mince the garlic, slice the carrots and zucchini, chop the red bell pepper, and cube the lamb into bite-sized pieces.
2In a large pot or Dutch oven, heat 3 tablespoons of olive oil over medium-high heat.
3Add the cubed lamb to the pot, and brown the pieces on all sides. This should take about 5-7 minutes. Once browned, remove the lamb from the pot and set it aside.
4In the same pot, add the chopped onion and minced garlic. Sauté them until the onion becomes translucent and fragrant, about 3-4 minutes.
5Stir in the ground cumin, ground coriander, ground cinnamon, turmeric, cayenne pepper, salt, and black pepper. Cook the spices with the onion and garlic for about 1 minute to release their aromas.
6Return the browned lamb to the pot, along with any juices that have accumulated. Stir everything to coat the lamb with the spices.
7Add the sliced carrots, zucchini, and chopped red bell pepper to the pot. Stir to combine.
8Pour in the canned chickpeas, diced tomatoes, and 2 cups of chicken or vegetable broth. Stir well to mix all the ingredients.
9Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 45 minutes to 1 hour, or until the lamb is tender and the flavors have melded together.
10About 10 minutes before the stew is done, stir in 1/3 cup of raisins. Let them plump up in the simmering stew.
11While the stew is simmering, prepare the couscous. In a separate medium saucepan, bring 2 cups of water to a boil.
12Once the water is boiling, remove the saucepan from the heat and add 2 cups of couscous.
