2In a large bowl, mix the 2 tablespoons of olive oil and the 2 tablespoons of achiote paste until well combined.
3Add the pineapple juice, soy sauce, apple cider vinegar, dried oregano, ground cumin, ground black pepper, garlic powder, onion powder, and chili powder to the bowl. Mix well until you have a uniform marinade.
4Add the cubes of butternut squash to the marinade and stir until the squash is well coated with the mixture.
5Place the marinated squash on a baking sheet lined with parchment paper, making sure to spread it out in a single layer for even cooking.
6Bake the squash in the preheated oven for about 25-30 minutes, or until tender and slightly caramelized. Remove the baking sheet from the oven halfway through the cooking time to ensure even browning.
